SUPER HEALTHY PUMPKIN APPLE MUFFIN FOR KIDS

(16 regular or 30 mini muffins)

Ingredients:

2 cups whole wheat flour

¼ cup molasses

2-3 tsp Natreen liquid sweetener

1 tbs mixed spice

1 tsp baking soda

1 tsp baking powder

2 large eggs

2 cups pumpkin puree

¼ cup apple sauce/puree

¼ cup low-fat yogurt

1 cup apples, chopped into small chunks

Method:

Preheat oven to 180’C. Mix flour, molasses, sweetener, mixed spice, baking soda and baking powder in large mixing bowl. Set aside. Beat eggs in separate bowl. Mix in pumpkin puree, apple sauce and yogurt. Fold wet ingredients into dry ingredients until just combined. Do not overmix. Fold in apple chunks. Line muffin pan with baking cups. Fill each muffin cup ¾ full and bake 25-30 minutes, or until toothpick inserted in muffin comes out clean. *recipe adjusted from super healthy kids by Sophia Nieuwoudt*
