(Serves 1)


½ ripe avocado
2 cubes goat’s cheese
pinch chilli flakes
handful pumpkin seeds (pepitas)
pinch sea salt and cracked black pepper
1 piece whole-wheat seeded low GI bread, toasted
squeeze lemon juice


Put the avocado and goat’s cheese into a bowl and mash using a fork until combined but still chunky. Sprinkle chilli flakes, pumpkin seeds and a pinch of salt and pepper into the mix and stir to combine. Lightly toast your favourite seed-based slice of bread (gluten-free is fine, too).
