SWEET POTATO, SALMON AND TOMATO MASH

(Makes 4 portions – Suitable from 6 months as a puree, or from 7/8 months as a mash)

 

Ingredients:

350g sweet potato, peeled and chopped

100g salmon fillet

4 tbs milk

25g parmesan cheese, grated

2 tomatoes, skinned and chopped

1 tbs basil, chopped

 

Method:

Cook the sweet potato in boiling water or steam for about 10 to 12 minutes or until soft, then drain and mash. Put the salmon into a bowl, add the milk and cover with cling film. Make a few holes in the cling film and cook in the microwave for 1 ½ minutes until it is cooked through. Flake into the mash and add the cheese, tomatoes and basil. Stir over the heat until the cheese has melted. You can mash again if your baby can’t yet cope with bigger lumps. *Baby London Magazine, Sep Oct 2015*
