ROASTED ASPARAGUS WITH PARMESAN:

(Serves 4)

 

Ingredients:

olive oil cooking spray
500g fresh asparagus, tough ends trimmed
1⁄4 tsp sea salt
1⁄4 tsp garlic powder
1⁄2 cup shredded parmesan cheese

 

Method:

Preheat oven to 200°C. Spray a 23 x 34 cm baking dish with cooking spray. Lay asparagus in a single layer in dish and lightly spray with cooking spray. Sprinkle with salt and garlic powder. Bake, sprinkling with cheese halfway through baking, until a fork easily punctures thickest part of stem, about 10 minutes if asparagus are thin, 20 minutes if asparagus are thick.

 

Note:

Asparagus is a yummy vegetable. To keep it fresh for several days in the fridge, trim the stem ends and stand the spears in a bowl with a couple inches of water. You can serve this as a side dish or an appetizer.
