CHICKEN PASTA SALAD WITH CONFETTI VEGGIES

(Serves 4)

 

Ingredients:

280g cooked orzo pasta (preferably durum wheat, like Fatti’s & Monis)

2 cooked chicken breasts, diced

¼ cup each of diced red, yellow & green bell peppers

¼ cup diced carrots

¼ cup petite peas

2 scallions, sliced

1/3 cup dried black currants

Salt & black pepper

Lemon honey vinaigrette:

½ cup extra virgin olive oil

4 tbs lemon juice

3 tbs honey

salt & black pepper

 

Method:

Combine the pasta with all of the veggies & chicken. Shake the dressing ingredients in a jar & add to the pasta salad. Season with salt & pepper if needed. Adjust ratios of ingredients to suit your taste, but consider your health requirements with every adjustment you make.

 

Notes:

This no-mayo chicken pasta salad is dressed with a light vinaigrette & has tiny diced veggies for an extra boost!
