EASY FRENCH TOAST AND FRUIT

(Serves 2)

 

Ingredients:

1 egg

1 egg white

1 tsp Stevia (or your favourite sweetener)

1 tsp ground cinnamon

2-3 slices whole-grain bread (look for brands with extra fibre)

½ cup fresh fruit (peaches, strawberries, bananas, blueberries, or raspberries)

2 tsp sugar-free or real maple syrup (or honey)

 

Method:

Heat a skillet coated with cooking spray over medium-high heat. Crack egg and egg white into bowl and add sugar and cinnamon. Beat with a fork until yolk and cinnamon are well mixed. Dip bread into egg mixture and remove, letting excess mixture fall back into the bowl. Cook bread in skillet for about 3 minutes on each side. Remove bread from skillet and top with syrup and fruit. *Skinny Mom*
