These sweet potato pizza bites are a vegan, gluten free way to enjoy one of our favourite foods – PIZZA! They are versatile enough for you to add whatever ingredients you prefer and make it a home run every time!



2 sweet potatoes, scrubbed

½ cup basil or olive pesto

1 can artichoke hearts

½ cup soaked sun dried tomatoes

1 roasted red pepper, thinly sliced



Preheat oven to 210’C. Wash the sweet potatoes and carefully cut them into 3mm rounds. Lay sweet potatoes in a thin layer on a greased baking sheet, making sure they don’t overlap. Bake for 15 minutes. Take out and flip, bake for an additional 7-10 minutes. Take out of oven and allow to cool on a cooling rack for at least 5 minutes before topping with teaspoon or two of pesto, a piece of artichoke, a few sun dried tomato slivers, and a few roasted red pepper slices. You can easily make this an assembly line for friends to make their own! If desired, pop back into the oven to let the topping heat through. *Pancake Warriors*
